Festive Couscous

Instructions

1 cup couscous
1 cup vegetable broth
1 tbsp margarine
1/2 cup mixed vegetables
1/2 can chili style tomatoes
1 tbsp chili sauce
1 tsp Italian seasoning

Drain liquid from mixed vegetables in to a measuring cup and
add enough water to equal 1 cup. Add margarine and couscous.

Cover and set aside for a few minutes. Couscous
will absorb the broth.

Combine mixed vegetables, chili tomatoes along with the chili
sauce. Microwave for 2 minutes.

Stir into the couscous and mix together. Add Italian
seasoning. Stir. Return to the microwave for a 20 seconds.

Serve

Cherry Vanilla Dessert

Instructions
1 tbsp margarine
8 vanilla wafers
1 vanilla pudding, individual serving
1/2 can cherry pie filling
1/2 cup whipped cream (optional)

Melt margarine in the bottom of a bowl for 15 seconds. Stir
in crumbled cookies and sugar. Press evenly with a spoon.

Return to microwave for 30 seconds. Remove and cool.

Spoon the vanilla pudding on top of the wafers. Top with
cherry pie filling and whipped topping.

Serve

Noodles with Bacon & Tomato

Instructions

1 pkg Ramen noodles, pork flavor
2/3 cup tomato soup (approximately 1/2 can)
1 tbsp diced onion
1 tsp seasoning, packet
2 tbsp bacon bits
2 tbsp grated cheese

Prepare noodles in accordance with the package Instructions,
adding onions. Strain. Stir in tomato soup, add seasoning.

Sprinkle with bacon bits and cheese. Microwave for 15-20
seconds.

Serve

Avocado Salad

Instructions

2 avocados
11 oz can mandarin oranges
2 tbsp chili sauce
1 tbsp ranch dressing
1/8 head lettuce

Peel avocado and dice flesh into cubes. Discard the pit.
Drain liquid from the mandarin oranges and mix with the
cubed avocado. Place on to a bed of lettuce.

Combine the chili sauce and ranch dressing spoon over
oranges and avocado cubes.

Serve
